Gluten Free Buttermilk Pancakes

  1. Add buttermilk and water to a large bowl and mix together.
  2. Combine all dry ingredients and sift in to the buttermilk and water mixture. Lightly mix a few times with a spoon.
  3. Add hot bacon grease and mix until just combined. Do not over mix. Batter will seem slightly thick.
  4. Pour 2-3 inch pancakes onto a hot 350F degree griddle and cook until golden brown and cake like in the middle.
  5. Top with your favorite Toppings.
